MEXICAN CASSEROLE 
1/2 c. chopped onion
2 cloves garlic, minced
1 tbsp. oil
1 1/2 lbs. lean ground beef
2 (14 1/2 oz.) cans Del Monte Italian style stewed tomatoes
4 oz. diced green chilies
4 oz. chopped olives
2 (7 oz.) pkgs. Doritos Nacho cheese tortilla chips, crushed
1 pkg. taco seasoning
1/3 lb. Mozzarella cheese, shredded
2 c. sour cream or plain yogurt (opt.)
1/2 c. shredded cheddar cheese

NOTE: May use more of both cheeses than specified.

Preheat oven to 350 degrees. Heat oil in large skillet over medium heat. Add onions and garlic. Saute until translucent. Add meat and cook until browned, stir frequently. Blend in tomatoes, taco seasoning, chilies and olives and simmer 10 minutes.

Grease 9 x 13 inch baking dish. Layer 1/2 of the crushed chips over bottom. Add all of meat mixture. Sprinkle Mozzarella over meat mixture, then spread sour cream or yogurt over that. Top with remaining chips.

Bake 30 minutes. Sprinkle with cheddar cheese and continue baking until cheese melts. Let stand 5 minutes before serving.
