MEXICAN CASSEROLE | |
1/2 c. chopped onion 2 garlic cloves, minced 1 lb. ground beef or chicken 1 (28 oz.) can stewed tomatoes 1 pkg. taco seasoning mix 1 (4 oz.) can diced green chilies 1 (12 1/2 oz.) can chopped olives 1 (16 oz.) pkg. Nacho cheese tortilla chips 1/2 lb. shredded mozzarella cheese 1 pt. sour cream or plain yogurt 1/2 c. shredded cheddar cheese Preheat oven to 350 degrees. Heat onion and garlic in microwave or skillet until translucent. Add meat. Cook until browned. Blend in tomatoes, seasoning, chilies and olives. Simmer 10 minutes. In greased baking dish, layer half of chips, lightly crushed. Add all of meat mixture, then mozzarella and sour cream (or yogurt). Top with remaining chips. Bake 30 minutes. Top with cheddar cheese and return to oven to melt. Let stand 5 minutes before serving. |
