PINEAPPLE SQUARES 
1 c. vanilla wafer crumbs
1 (3 1/2 oz.) pkg. coconut or (1 1/4 c.)
1/2 c. butter (no butter)
1 1/2 c. sifted confectioners sugar
1/2 c. whipping cream, whipped
2 eggs
1 (9 oz.) can crushed pineapple (drained)
1/2 c. broken walnut meats
1/4 c. maraschino cherries (drained and chopped)

Place 1/2 crumbs in bottom of 9 x 9 x 2 inch pan. Sprinkle with 1/2 coconut. Cream butter, gradually add sugar, cream until light. Add eggs, one at a time, beat well after each. Spread over coconut. Fold pineapple, nuts and cherries into whipped cream. Spread over mixture in pan; sprinkle with rest of coconut and crumbs. Chill at least 4 hours or overnight. Serves 12. Double for a 9 x 12 inch pan.
