MARINATED CARROTS (Mexican
Style)
 
Boil desired amount of sliced carrots until soft to your taste. Add equal amounts of vinegar and oil and water until the carrots are nearly covered in marinade. Add desired amount of quartered onions. Add desired amount of canned jalapeno peppers and their juice. The more peppers the hotter your carrots will be. Add salt if desired. Let marinade all day or overnight.
