CUCUMBER SALAD 
1 cucumber, peeled and thinly sliced
1 tbsp. salt
1/2 tsp. granulated sugar
1 tbsp. mayonnaise
pepper, to taste

Place cucumber slices in a colander and sprinkle with all the salt. Leave sit for a half hour. Rinse and drain the cucumber slices well.

Now take a linen tea towel and place the cucumber slices in the middle. Twist the tea towel strongly in order to extract as much liquid as possible.

Place cucumber in a bowl and add the sugar and the mayonnaise. Refrigerate until well chilled. Add pepper to taste.

Serve this with fish or grilled chicken, or add to a sandwich.
