FRUIT SALAD WITH FRUIT DRESSING 
2 quarts, 8 c., fruit salad mix
1 c. milk
1 6 oz. can pineapple juice
1 3 oz. package vanilla instant pudding mix
1/2 c. non-dairy whipped topping, thawed

Divide fruit among serving dishes.

In a medium bowl, whisk together milk, pineapple, juice and pudding mix for 2 minutes. Let stand for 5 minutes for mixture to thicken.

Whisk topping into mixture. Spoon over fruit salad. Garnish with fresh mint, if desired.
