TWICE BAKED POTATOES 
6 lg. baking potatoes
1/2 c. butter, softened
3/4 to 1 c. milk or cream
3 tbsp. crisp bacon, crumbled
3 tbsp. minced onion
1 tbsp. snipped chives
1/2 tsp. salt
1 1/2 c. shredded Cheddar

Bake potatoes until done. Cut lengthwise slice from top of potatoes. Scoop out pulp and place in bowl. Mash potato with butter. Blend in milk, bacon, onion, cheese and salt and pepper to taste. Stir in 1 cup cheese. Refill potato shells. Top with cheese, sprinkle with paprika. Bake at 375 degrees for 25-30 minutes.
