TWICE BAKED POTATOES 
10 baking potatoes, baked
3/4 to 1 (16 oz.) carton sour cream
1 bunch green onions
3/4 pkg. bacon, fried and crumbled (save 1 tbsp. drippings)
1/2 to 1 c. butter
1/4 to 1/3 c. milk
1 c. shredded Cheddar cheese

Scrape potatoes out of skins while hot into large bowl. Mash well with milk and butter. Mix in sour cream, onions, bacon, drippings, 1/2 cup cheese. Put in large casserole, top with remaining 1/2 cup cheese. Bake 1/2 hour at 350 degrees.

Casserole can be prepared the day before. Bring to room temperature before baking.
