TWICE BAKED POTATOES 
6 lg. baking potatoes
1/2 stick butter
1 tbsp. salt
1/2 tsp. pepper
1/2 c. sour cream
Grated cheese (Cheddar, Swiss, Parmesan)

Scrub potatoes and bake at 400 degrees for 1 hour or until soft. Cook until easily handled. Cut potato in half lengthwise and scoop pulp into bowl - SAVE SHELLS. Beat in butter, salt, pepper and sour cream; refill shells. Sprinkle with grated cheese and bake at 350 degrees for about 40 minutes.

(Use creamed cottage cheese or yogurt instead of sour cream if desired.)
