SPINACH CASSEROLE 
3 slices bacon, crisp
1 onion, minced
2 pkg. chopped spinach, defrosted & drained
2 eggs
1/2 tsp. salt
3 tbsp. bread crumbs
1 c. grated Cheddar cheese

Cook bacon and put aside. Crumble when cool. Cook onion, cheese and defrosted, drained spinach. Beat eggs with salt and stir into spinach mixture. Sprinkle with bread crumbs and bacon. Recipe may be doubled. Use slightly larger casserole.
