BEST EVER RICE PUDDING 
1 c. regular long-grain rice
1 qt. water
1 c. sugar
1 tsp. salt
2 tsp. vanilla
1 (12 oz.) can evaporated milk
1 1/2 c. milk
1/2 c. raisins (optional)
1 tsp. cinnamon (optional)

Rinse rice. Add to 1 quart water in heavy saucepan. Cook over low heat until the water is absorbed. Remove from heat. Add rest of ingredients and mix well. Pour into casserole dish.

Bake in 350°F oven for 40 minutes.
