BEST RICE PUDDING 
1 c. sugar
1 c. rice (not instant or long grain)
8 c. milk
2 eggs
1 tsp. vanilla
Cinnamon to taste

In large pan, place sugar first (keeps rest of ingredients from stocking) then rice, then milk. DO NOT STIR. Bring to a boil, stir and lower heat. Cook over low heat uncovered for one hour, stirring frequently. Remove from heat. Beat eggs and add to rice mixture, stirring constantly. Then add vanilla, mix well. Pour into large serving dish. Sprinkle top with cinnamon after it cools slightly.
