FRUITED PORK | |
1/3 c. marmalade 1 tbsp. spicy brown mustard 1 lg. Granny Smith apple 1 lg. Bartlett pear 1 lb. pork tenderloin (trimmed of fat) Preheat broiler. Mix together marmalade and mustard. Slice fruit into 1/2 inch slices. Broil pork 6 minutes on 1 side, turn pork; place sliced fruit on rack next to pork. Broil for 5 minutes. Spread 1/2 sauce on pork and fruit. Broil 1 minute, turn pork, cover with remainder of sauce. Broil 1 minute. Let stand 5 minutes, then carve. |
