SPANISH RICE PRONTO 
3 slices bacon, cut up
1/2 c. sliced onion
1/3 c. diced green pepper
2 c. minute rice
1 clove garlic, minced
2 c. hot water
2 (8 oz.) cans tomato sauce
1 tsp. salt
Dash pepper
1/2 tsp. dry mustard

Saute bacon until brown. Remove from pan. Saute onions, garlic, green peppers and rice in bacon drippings. Add remaining ingredients; mix well and bring to a boil. Reduce heat, simmer uncovered, 5 minutes. Cover and let stand for 3 minutes before serving.
