CORN FIELD PEAS
2 c. fresh black eyed peas (or frozen)
2 c. water (if using canned peas, eliminate this step)
2 slices bacon
Salt and pepper to taste
Sprinkle of brown sugar
Chopped tomato for garnish

Boil the peas in the water until tender. Cut bacon in 1 inch pieces; saute until limp, then add drained peas, "encouragin" of the gravy to seep out and inter-marry with your peas. When modritly brown, but not skorcht, mash 'em gently with a spoon. Mix with tomatoes, sprinkle with a little sugar and the "immortal dish are quite ready. It's good for yore gen'ral health..makes ya sassy and goes throo and throo yore sole." It brings good lick, too, if served on New Year's Day!!!

I ran into this recipe in a reproduction printing of _Housekeeping in Old Virginia_, lo, these 40 (50?) years ago. I've been making it ever since. Stop? Never while thar is a pea in the bowl!
