SAVORY MUSTARD PORK 
1 (3 lb) boneless pork loin
2 tbsp. Dijon mustard
3 tbsp. minced fresh parsley
1 tbsp. EACH minced fresh thyme, rosemary, garlic and olive oil

Heat oven to 450°F.

Season pork with salt and pepper. In bowl, combine remaining ingredients. Rub herb-mustard mix evenly over pork loin. Place pork in roasting pan.

Roast 10 minutes. Reduce oven temp to 250°F. Roast 1 hour. Transfer pork to platter, cover loosely with foil. Let stand 15 minutes before slicing.

THis is like what I do for eye round roast. Very good results. I had mostly fresh herbs but some dried (Thyme).

I had to use dry herbs and it still turned out wonderful! Can't wait to try it with fresh ingredients.
