COCONUT PIE (With Buttermilk) 
1 can coconut
2 c. sugar
2 tbsp. flour
4 eggs, beaten
1 stick butter
1 tsp. vanilla
1/3 c. buttermilk

Line pan with pie crust. Butter crust. Spread coconut on buttered crust. Mix sugar, flour, beaten eggs, buttermilk, melted butter and vanilla. Pour over coconut. Bake at 375 degrees until set, about 40 minutes.
