SWEET POTATO CASSEROLE 
1 c. sugar
1 cube butter
3 c. sweet potatoes
2 tsp. vanilla
2 eggs (slightly beaten)

TOPPING:

1/3 c. flour
1/2 cube butter
1 c. pecans (optional)
1 c. brown sugar

Boil potatoes until tender or use canned, drained sweet potatoes. Heat up and mix in 1 cube butter and sugar. Mix in next 2 ingredients and put into 9x11 inch greased casserole dish.

Topping: Melt butter, mix in sugar, flour and nuts. Mix to crumbly stage. Crumble on top of the potato mixture. Bake 1 hour at 350 degrees.
