BANANA-PINEAPPLE POUND CAKE | |
3 c. flour 2 c. sugar 1 tsp. salt 1 tsp. baking soda 3 eggs, slightly beaten 2 c. bananas, mashed 1 c. oil 1 (8 oz.) can crushed pineapple, undrained 1 tsp. vanilla In mixing bowl, thoroughly stir together flour, sugar, salt, soda. Make 2 wells in center of dry ingredients. Combine eggs, bananas, oil, undrained pineapple and vanilla. Add all at once to dry ingredients, stirring until well moistened. Pour batter into greased fluted or Bundt pan. Bake t 350 degrees for 60 to 70 minutes or until it tests done. Cook in pan 15 minutes. Remove and cool on wire rack. Freezes well, too. (WV) |
