DICED PINEAPPLE AND BANANA BUNDT
CAKE
 
3 c. sifted flour
1 tsp. baking soda
2 c. sugar
1 tsp. salt
1 1/2 c. cooking oil
1 (8 oz.) can crushed pineapple with juice
1 1/2 tsp. vanilla
3 eggs
2 c. diced ripe bananas

Sift dry ingredients together. Add bananas, oil, vanilla, eggs, and pineapple with juice. Blend but do not beat. Pour into greased bundt pan. Bake at 350 degrees for 1 hour and 20 minutes. Ice with glaze made with powdered sugar and pineapple juice or water.

Nice moist cake. I used more crushed pineapple as I had a 20 oz. can. I didn't add all of it, but probably 14 oz. or so. Takes forever to bake! My family loved it, not too sweet, not too banana-y. Beautiful golden brown crust.
