FRESH BANANA BUNDT CAKE 
1/2 c. shortening
1 1/2 c. sugar
1 1/2 c. mashed banana (about 3)
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. sour cream

Cream shortening, slowly add sugar and beat until light. Add banana, eggs, and vanilla and beat well. Mix dry ingredients and add to other mixture. Slowly add sour cream and beat until well blended. Spread in pan and bake for about 45 minutes. Cool in pan 5 minutes before inverting on rack. Bake at 350 degrees. Use spray in Bundt pan.

ICING:

2 1/2 c. powdered sugar
4 tsp. hot water
1 tsp. rum flavoring

Put water in a small bowl and beat in powdered sugar until frosting is thick enough to spread. Add flavoring, continue beating until creamy.
