CHEESE GRITS 
6 c. boiling water
1 1/2 c. quick grits
3 beaten eggs
1 lb. Velveeta cheese
1/2 to 3/4 stick butter
3 tsp. salt
Dash Tabasco sauce

To the boiling water add grits. Cook grits in boiling water in large pan. Add butter, seasoning, cheese and eggs. Pour into 13 x 9 inch dish and bake 1 hour at 300 degrees or until set. Chopped green chilies may be added for variety and flavor.
