HASH BROWN POTATO CASSEROLE 
1 lb. frozen hash brown potatoes, thawed
1/2 stick butter (room temperature)
1/2 c. onions, chopped
1 tsp. salt
1 can cream of chicken soup
1 1/2 c. shredded cheddar cheese
1/2 tsp. pepper
1 c. sour cream

Mix the above ingredients. Pour into a large baking dish. Top with a mixture of 2 cups finely crushed corn flakes and 1/2 cup melted butter. Bake at 400 degrees for 1 hour. Leave covered until about last 10 to 15 minutes. This can be refrigerated overnight before cooking.
