SPANISH RICE 
2 c. rice, if using instant, make the amounts for 6 servings.
4 c. water
1 tsp. salt
1 lb. bacon, cubed
1 med. onion, diced
1 bell pepper, diced
1 qt. tomatoes or 4 c. diced fresh tomatoes

Place water and salt in a pan and bring to a boil, add rice. Cover and cook slowly for 25 minutes. Add a little water during cooking if rice becomes too dry.

While the rice is cooking, put bacon in a frying pan and cook until done. Add onion and pepper and cook until onion is transparent. Drain fat off.

Add rice to bacon mixture, then add tomatoes and simmer for about 25 minutes until well blended. Serve hot.
