SALEMA SHERMAN'S JAM CAKE | |
Cream 2/3 cup butter and 1 1/2 cups sugar. Add beaten yolks of 4 eggs and 2/3 cup buttermilk into which has been stirred 1 teaspoon baking soda. Add 2 heaping cups of flour and 1 cup blackberry jam. Add 1 teaspoon each of cinnamon, cloves, and allspice. Then add beaten whites of 4 eggs. Bake in 4 layers at 325 degrees. FILLING: (Caramel) 2/3 c. milk 2 c. sugar 1/4 c. sugar, caramelized 1 c. butter 1/3 tsp. baking soda After caramelizing sugar, add to the milk and sugar and boil together, stirring constantly until slightly thick. Add 1 teaspoon vanilla and 1 cup of nuts before spreading. This filling may be used on a 4 layer white cake by doubling the recipe, omitting the nuts and adding to warm layers. Let filling soak into the layers and makes a delicious caramel cake. |
