GOLDEN FILLETS 
2 lbs. fillet (haddock, flounder or sole)
1/4 c. butter
1/2 c. bread crumbs
1/4 c. Parmesan cheese
1/2 tsp. garlic salt
1/4 tsp. herbs
1/2 c. mayonnaise
Fresh parsley

Rinse and pat fish dry with paper towels. Cut into 4 or 5 pieces. Add butter to a shallow baking dish. Place in 350 degree F. oven to melt.

Mix crumbs, cheese, salt and herbs. Spread mayonnaise on one side of the fish. Remove baking dish from oven and arrange fish in a single layer. Turn over to coat with melted butter. Sprinkle leftover crumbs on top.

Measure height of fish at highest point. Bake at 425 degrees F. for 10 minutes for each inch of height (one inch fish takes 10 minutes). Garnish with parsley. Makes 4 to 5 servings.
