CREAMY BAKED FILLET OF SOLE 
1 1/2 lbs. flounder or sole
3 tbsp. butter
4 tsp. shallots, finely chopped
1/2 c. dry white wine
1/4 c. heavy cream
1/4 c. bread crumbs
1 tbsp. parsley, chopped

Grease shallow baking dish with 1 tablespoon butter and sprinkle with a few chopped shallots. Roll fillets tightly and place in dish. Pour wine and then cream over fish; add pepper to taste, bread crumbs, parsley and remaining shallots. Melt 2 tablespoons butter and pour over all. Bake in preheated 400 degree oven for 20-25 minutes. Serves 6.
