JALAPENO BLACK BEAN DIP 
1 (16 oz.) can black beans
1/3 c. light mayonnaise
2 tbsp. minced pickled jalapenos
1/2 tsp. ground cumin
1/4 tsp. garlic powder
1 c. lowfat shredded Monterey Jack cheese

Drain beans. In a medium bowl, mash beans slightly with a fork. Stir in mayonnaise, jalapeno peppers, cumin, garlic powder and 1/2 cup cheese. spoon into 1-quart ovenproof dish. Top with remaining cheese. Bake in 375 degrees oven for 20 minutes. Serve with tortilla chips.
