COCOA RAISIN NUT COOKIES 
1/2 c. softened butter
1/2 c. sugar
1/2 c. firmly packed brown sugar
1 egg white
1/2 c. low-fat milk
1 tsp. vanilla
2 c. oats
2/3 c. flour
1/2 c. unsweetened cocoa
1 1/2 tsp. baking powder
1 c. raisins
1/2 c. chopped peanuts

Preheat oven to 350 degrees. Spray cookie sheet with cooking spray. Beat butter, sugar, egg white, until creamy. Add milk and vanilla. Mix well. Stir in all dry ingredients along with raisins and peanuts.

Drop by rounded teaspoon on cookie sheet. Bake 12-14 minutes. Cool 1 minute on cookie sheet. Remove to wire rack. Makes approximately 5 dozen.
