COCOA RAISIN NUT OATMEAL COOKIES 
1/2 c. (1 stick) butter, softened
1/2 c. granulated sugar
1/2 c. firmly packed brown sugar
1 egg white
1/2 c. low fat or skim milk
1 tsp. vanilla
2 c. Quaker oats (quick or old fashioned, uncooked)
2/3 c. all-purpose flour
1/2 c. unsweetened cocoa
1 1/2 tsp. baking powder
1 c. raisins
1/2 c. chopped peanuts
Additional chopped peanuts, optional

Heat oven to 350 degrees. Spray cookie sheet with non-stick cooking spray or grease lightly. Beat butter, sugars and egg whites until creamy. Add milk and vanilla; mix well. Stir in combined dry ingredients, raisins and peanuts.

Drop by rounded teaspoonfuls onto prepared cookie sheet. If desired, sprinkle additional chopped peanuts over top. Bake 12-14 minutes or until just set. Cool 1 minute on cookie sheet; remove to wire rack. Store tightly covered.
