CHOCOLATE MINT FRANGO 
Our traditional 4th of July dessert. Rich!

1 cup (2 sticks) butter
2 cups powdered sugar (sifted)
4 (1 oz. ea.) sq. unsweetened chocolate, melted
4 eggs or Pasteurized equivalent (Egg Beaters)
1 tsp. vanilla
3/4 tsp. peppermint extract
1 c. vanilla wafer crumbs (1/2 of 7 oz. box)

Beat butter and sugar. Add chocolate and beat to combine, then eggs one at a time (or Egg Beaters), then add flavorings. Add small amount of wafer crumbs to bottom of 18 paper-lined muffin cups. Spoon in frango and top with last of crumbs (optional) for garnish. Freeze until firm. Serve and enjoy!
