CRANBERRY PEAR SAUCE 
2 med. pears, peeled, halved, cored, and coarsely chopped (2 1/2 c.)
1 (6 oz.) can frozen apple juice concentrate
1/2 c. water
1/2 c. sugar
1 (12 oz.) pkg. fresh cranberries
2 tbsp. chopped ginger

In a 2-quart saucepan, combine pears, apple concentrate, water and sugar. Bring to boiling. Lower heat, then simmer 10 minutes. Stir in berries and ginger. Simmer 10 minutes or longer, until berries pop and mixture thickens. Cool, then refrigerate. Sauce will thicken upon standing.
