POTATO PANCAKES 
3 potatoes
1/2 onion, chopped fine
3 tbsp. parsley
1 beaten egg
2 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. baking powder

Wash and peel potatoes. Grate or place in a grinder with onion and parsley. Add egg. Sift flour, salt, pepper an baking powder. Add to potato mixture, adding a little milk if needed to make right texture for dropping on hot griddle. Make pancakes size of the top of a coffee cup. Brown on both sides. Serve immediately.

Hint: Potatoes hold a lot of water. Before adding flour mixture, squeeze potatoes to get most of the water out.
