SPICY CARROT CAKE 
1/3 c. boiling water
2 c. finely shredded carrots
2 c. all-purpose flour
1 1/4 c. sugar
1 1/4 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. ground cloves
1/2 c. vegetable oil
3 eggs
1 tsp. vanilla
1 c. chopped nuts

Heat oven to 350 degrees. Grease and flour 13 x 9 x 2 inch pan. Put in all ingredients except first two in bowl. Pour water over carrots and mix with other ingredients. Beat until smooth and well mixed. Pour into pan. Bake 45 to 50 minutes. Cool.
