CRAB, TUNA OR CHICKEN SOUFFLE 
8 slices bread, crust removed
2 c. crab, tuna or chicken
1/2 green pepper, chopped
1/3 c. grated onion
1 c. celery
1 c. mayonnaise
4 eggs
2 c. milk
1 can mushroom soup
1 c. grated cheddar cheese

Mix meat, pepper, onion, celery and mayonnaise. Lay bread on bottom of pan, spread mixture over bread. Pour beaten eggs and milk mixture over bread. Refrigerate overnight. Before baking spread beaten mushroom soup over top with cheese. Bake at 325 degrees 1 hour.
