PERSIMMON COOKIES 
1 c. persimmon pulp
1 tsp. baking soda
1 c. sugar
2 c. flour
1 c. raisins
1 egg, beaten
1 c. walnuts
1 tsp. salt
1/2 c. shortening
1/2 tsp. nutmeg (optional)
1 tsp. cinnamon (optional)
I use 2 tbsp. pumpkin pie spice

Sprinkle baking soda over pulp. Beat pulp, baking soda, sugar and shortening until fluffy. Add egg, flour and spices. Then add nuts and raisins. Drop by spoonfuls on baking sheet. Bake 17 minutes at 375 degrees.
