HONEY APRICOT BREAD 
1 c. milk, scalded
2/3 c. Post Grape Nuts brand cereal
1 egg, well beaten
3 tbsp. butter, melted
1/4 c. honey
1 3/4 c. flour
2 1/2 tsp. baking powder
2/3 c. firmly packed brown sugar
2/3 dried or Turkish apricots, finely chopped

Scald milk; add cereal; cool. Add eggs, butter and honey; mix well. Sift in flour and baking powder. Add sugar and fruit; mix only long enough to moisten flour.

Fill a greased 8x4 inch loaf pan (or 3 mini sized pans). Bake at 350 degrees for 50 minutes. Cool 10 minutes; remove from pan.
