APRICOT BREAD 
1 c. diced dried apricots
1/3 c. water
2 c. flour
1 tbsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1 c. sugar
2 tbsp. butter
1/2 c. orange juice
3/4 c. nuts, chopped

Soak apricots in water for 20 minutes. Lightly grease and flour a bread pan or a round cake layer pan. Preheat oven to 350 degrees. Mix flour, baking powder, salt, and baking soda. In a large bowl beat sugar, butter and egg until light and fluffy.

Drain water from apricots into orange juice. Stir flour into butter mixture 1/2 cup at a time, alternating with 1/3 cup orange juice. Stir in apricots and nuts. Spoon batter into pans. Bake at 350 degrees for 60 minutes or until toothpick comes out clean.

These freeze well. I always make batch after batch after batch and freeze the extra.
