ENCHILADA CASSEROLE 
1 lb. lean ground beef
1 onion, chopped
1 sm. can green chilies
2 (10 oz.) cans red enchilada sauce
1 (10 oz.) can green enchilada sauce
12 corn tortillas
Approximately 1 c. grated Cheddar cheese
Approximately 1 c. grated Monterey Jack cheese

Brown ground beef and onion. Drain well. Add green chilies and the green enchilada sauce to the meat mixture. Lay 6 corn tortillas on the bottom of a 9x13 inch pan. Pour a little red enchilada sauce over the tortillas, add some meat mixture and then add some of the cheese. Pour more red enchilada sauce over. Repeat the layers: tortillas, sauce, meat, remainder of red enchilada sauce and top with the remainder of the cheese.

Bake at 350 degrees for 30 minutes. Let set for 5 minutes before serving. Black olives and or a layer of refried beans can also be used. Be creative!
