MOCK ENCHILADA CASSEROLE 
1 lb. ground beef or ground turkey
2 tbsp. fat
1/3 c. chopped onion
1 tsp. salt
1/4 tsp. pepper
15 oz. can chili con carne with beans
1 (11 1/2 oz.) pkg. corn chips or tortilla
1/2 lb. cheese, diced
1 1/2 qt. casserole

Brown meat in fat. Add onions. Cook until golden brown. Add salt and pepper and chili. Place layer of corn chips in greased casserole dish. Alternate layers of chili mixture and corn chips and cheese. Bake at 350 degrees for 10 minutes.

This is the closest in ingredients to my mom's Mock Enchilada recipe from 1975... I'm thinking it was either from the Cleveland Plain Dealer or the Cleveland Press newspapers. I still make it today!
