JUDY'S CORN DISH | |
1 can whole kernel corn, drained 1 sm. chopped bell pepper 2 tbsp. flour 2 tbsp. sugar 2 tbsp. butter or Nucco 1/2 tsp. salt 1/4 lb. Velveeta cheese, cut in tiny chunks 2 eggs, well beaten Mix flour, sugar, salt and eggs in pan, over low fire. Add chopped bell pepper and cheese and stir this mixture constantly. As it thickens it could burn, so constant stirring until it gets thick is the secret. When thickened pour over corn in a greased baking dish and bake for 1 hour at 350 degrees. This serves 4. You can substitute Mexicorn whole kernel corn and not have to chop bell peppers. The red and green peppers makes a festive touch at Christmastime. |
