RECIPE COLLECTION
“SAUSAGE CORNBREAD STUFFING” IS IN:

SAUSAGE CORNBREAD STUFFING
4 tbsp. butter
8 oz. bulk sage flavored sausage
1 large chopped onion
1 red bell pepper, cut into 1" pieces
1 (6 oz.) pkg. corn bread stuffing mix
2 tbsp. chopped fresh parsley
1-1/2 cups fat-free chicken broth

In large pot, melt 2 tablespoons butter over medium-high heat. Crumble in sausage, cook, stirring until browned. Add onion and red bell pepper, cook, stirring occasionally until tender and sausage is cooked through. Add chicken broth and remaining butter. Bring mix to boil, stir in stuffing mix until well combined. Cover, remove from heat. Let stand until stuffing absorbs the broth.

Fluff with fork, stir in parsley.

For once, everyone agreed on a stuffing that was wonderful.

 Dan (Maine) says:
This is the only type of stuffing I make. Everyone says it's the best stuffing they have had. I prefer to increase the amount of sausage and add crumbled boiled potatoes to the stuffing. I enjoy it as a meal in itself too with gravy over it.
