ZUCCHINI BEEF SCRAMBLE 
1 lb. ground beef
2 tbsp. chopped green onion
1 (16 oz.) can zucchini
1/2 tsp. crushed oregano
Salt and pepper to taste
1 c. cubed Monterey Jack or Cheddar cheese

In a 10-inch skillet brown meat, drain. Stir in onion, zucchini, oregano, salt and pepper. Dot with cheese, cover and simmer 10-15 minutes or until cheese is melted. Serve with garlic bread.
