MACARONI WITH ZUCCHINI AND BEEF 
1 lb. ground beef
1 clove garlic, minced or 1 tsp. garlic salt
1 med. onion, chopped
2 lbs. zucchini, cut in 2 inch chunks
1 c. green peppers, diced
1 qt. tomato juice
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. basil
1/4 tsp. oregano
2 c. uncooked elbow macaroni

Brown beef, garlic and onion in skillet. Drain. Add next 4 ingredients, cook over medium heat about 10 minutes. Add seasoning and simmer 30 minutes or until vegetables are tender. Meanwhile, cook macaroni, drain and then add to vegetables.

Kind of like what my Grandma use to make. I will add some cheese on top after the noodles are cooked. I made this as a skillet meal and just added some tomato sauce and beef broth and cooked my mac noodles right in that. We will see how it turns out. The broth is very good.
