LOW CALORIE ZUCCHINI GROUND BEEF
SKILLET
 
1 lb. lean ground beef
1 lg. onion, chopped
1 sm. green pepper, chopped
1 clove garlic, chopped
1 (16 oz.) can tomatoes, broken up
1/4 tsp. salt
Dash pepper
1/2 sm. zucchini or summer squash, or mixture of both

In large skillet brown beef with onion over medium heat, stirring frequently. Drain off fat. Add all ingredients, except squash, and simmer uncovered for 5 to 7 minutes. Add squash, which has been sliced 1/4 inch thick. Cover and cook 15 minutes longer. Servings may be sprinkled with grated Parmesan cheese if desired. Serves 4.
