SKILLET ZUCCHINI & BEEF 
1 lb. ground beef
1 tbsp. oil
1 med. onion, chopped
1 med. pepper, chopped
1 (16 oz.) can stewed tomatoes
1 (6 oz.) can tomato paste
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. garlic salt
2 med. zucchini, 1/4" slices

About 45 minutes before serving, in a large skillet over medium heat in oil, cook onion and pepper. Add meat and cook until meat turns brown. Stir in tomatoes, paste, salt, oregano, garlic salt. Simmer 10 minutes. Add zucchini, cook covered, for 10 to 15 minutes or until squash is tender. Makes 4 servings. Very good.
