ANGEL HAIR PASTA WITH ZUCCHINI, MUSHROOMS & BEEF | |
1 1/2 lbs. ground beef 1/4 c. olive oil 1 clove garlic 1 onion, chopped 3 zucchinis, sliced thin Parsley to taste 1 (8 oz.) can tomato sauce 16 oz. can whole tomatoes, quartered Basil to taste (fresh or dried) 1 bay leaf 1 (8 oz.) can mushrooms 9 oz. angel hair pasta Brown ground beef in frying pan drain and set aside. (Remove from pan.) In frying pan, saute 1/4 cup olive oil, garlic, onion and zucchini until tender. Add to the sauteed ingredients above ground beef, tomato sauce, whole tomatoes, quartered, basil, bay leaf and 8 ounce can mushrooms. Simmer for 30 minutes or so until everything is heated through. Boil angel hair pasta to the point of being al dente. Do not over cook. Pour sauce over pasta. Remove bay leaf. Serve with warm crusty Italian bread! Serves 4 to 6. |
