INDIAN PUDDING 
4 c. milk
1/3 c. corn meal
3/4 c. dark molasses
1/4 c. butter
1 tsp. salt
1 tsp. ginger
3 tbsp. sugar
1 egg, well beaten
1/2 c. raisins, optional
1/2 tsp. cinnamon

Put milk in top of a double boiler and bring to a boil over direct heat. Stir in corn meal. Place over boiling water and cook for about 15 minutes. Stir in molasses and cook for 5 minutes. Remove from heat.

Stir in remaining ingredients. Pour into well-greased baking dish. If you want a soft center, pour another cup of milk over the top. Bake uncovered 1 1/2 to 2 hours at 325 degrees. Serve hot with cream or ice cream. Serves 8.
