POTATOES IN THE BOATS 
6 lg. baking potatoes
1 c. thick dairy sour cream
1/4 c. butter
1 egg, slightly beaten
1 tsp. salt
Dash of pepper
2 tbsp. chopped chives

1. Bake potatoes in hot oven (400 degrees) until tender, remove from oven and carefully cut off tops. Cut off tops and scoop out potato, careful not to break shells.

2. Using an electric mixer, whip potatoes until smooth. Blend in cream, butter, egg, salt and pepper and whip to fluff. Blend in chives, adding a little milk or cream if necessary for desired mashed potato consistency.

3. Taste for seasoning and pile lightly into potato shell. Place in shallow baking dish and bake at 375 degrees about 15 minutes or until heated through. Place butter on top when baking.
