CARROT POTATO BOATS 
4 sm. potatoes
1/2 of 8 oz. pkg. Neufchatel or cream cheese, cut into chunks & softened
3-4 tbsp. skim milk
1/4 tsp. salt
Dash of pepper
1 c. cooked carrots, pureed
2 tbsp. chopped green onion

Bake potatoes in a 375 degree oven for 45 minutes or until done. Cool slightly. Cut in half lengthwise. Scoop out potatoes into a small bowl, reserving shells. Add cheese, milk, salt and pepper. Beat until fluffy, adding more milk if necessary. Fold in carrot and onion. Spoon potato mixture into potato shells. Bake on a baking sheet in 375 degree oven for 12 to 15 minutes or until heated through. If desired, sprinkle with chives.
